[포도주] 프랑스의 포도주에 대해서

◎ 프랑스의 포도주 1 ◎프랑스의 포도주를 알기 전에 와인에 대한 이야기를 먼저 포도주에 대한 지식을 알고 있으면 알기가 쉽다. 포도주를 다른 말로 와인이라고 많이 부른다.1. 포도주에 대하여..① 포도주이란?포도주는 영어로는 와인, 프랑스어로는 뱅, 이탈리아어로는 비노, 독일어로는 바인이라고 한다. 와인은 잘 익은 포도의 당분에 효모를 첨가하여 발효시켜 만든 것으로, 다소간의 알코올과 독특한 향기와 맛으로 오래도록 인류의 사랑을 받아 온 음료이다. 일반적으로 일컫는 와인은 포도로 만든 것을 말한다. 제조과정에서 물 등은 전혀 사용하지 않는 것이 큰 특징이라 할수 있다. 와인은 알코올 함량이 7 ~ 13%이며 와인의 원료인 포도는 기온·강수량·토질·일조기간 등의 자연적인 조건에 크게 영향을 받으므로 와인 역시 그와 같은 자연요소를 반영하게 되는데 그러므로 한 병의 와인 속에는 포도가 자란 지방의 자연의 조화가 함께 실려 있다고 할 수 있다.② 포도주의 역사고대 인류에게 와인만큼 신비스럽고 영험한 음료수는 없었다. 비위생적인 환경에서 물을 비롯한 모든 음식물이 쉽게 상하고 이러한 음식물을 섭취함으로써 많은 질병들이 발생했는데, 우연히 발견된 포도주는 발효과정을 거치는 동안 포도껍질에 묻어 있는 효모 이외의 생물이 자랄 수 없어 병원균의 침투가 있을 수 없어 위생적인 음료로서 이러한 문제를 완벽하게 해결해 주었다.문헌상 와인의 역사는 지금으로부터 약 6000년 전 소아시아 지방에서 시작된다. 그후 메소포타미아의 한 무덤에서 포도씨가 발견됨에 따라 기원전 4000년겨의 고대 그리스, 이집트등이에서 그 이전부터 와인을 즐겨마셨음을 추측할 수 있는데 처음 문헌에 등장하는 것은 기원전 1700년경의 바빌로니아 함무라비 법전에서 인데 이 법전에는 와인에 따른 여러 규정이 적혀 있다. 고대 이집트의 람제이 왕 분묘에서 포도나무의 재배에서부터 발효에 이르는 과정이 그려진 벽화가 발견되어 기원전 1400년경부터는 본격적인 와인제조가 이루어졌다는 사실이 증명되기도 했다. 기원전 때 쓰는 잔은 레드 와인 잔보다 덜 오목하다. 잔은 상큼한 맛을 잘 볼 수 있게 와인이 혀 앞 부분에 떨어지도록 되어 있다. 화이트 와인은 일반적으로 생선요리나 야채에 잘 어울리는데, 연어스테이크에 먹으면 맛있다. 화이트 와인의 종류로는 샤르도네(Chardonnay),쇼비뇽블랑(SauvignonBlanc),리슬링(Riesling),게비르츠트라미너(Gewirtztraminer),피노그리조(PinotGrigio),소아베(Soave),푸이퓌세(PouilyFuisse),리프프라우밀히(Liebfraumilch),샤블리(Chablis),프라스카티(Frascati)등이 있다⑵ 레드 와인적포도(검정포도)로 만드는 레드 와인은 화이트 와인과는 달리 붉은 색이 중요하므로 포도껍질에 있는 붉은 색소를 추출하는 과정에서 씨와 껍질을 그대로 함께 넣어 발효하므로 붉은 색소뿐만 아니라 씨와 껍질을 그대로 함께 넣어 발효하므로 붉은 색소뿐만 아니라 씨와 껍질에 있는 타닌(tannin) 성분까지 함께 추출되므로 화이트 와인과는 달리 떫은맛이 난다. 레드 와인의 일반적인 알코올 농도는 12∼14%정도이며, 화이트 와인과는 달리 상온(섭씨 18∼20도)에서 제 맛이 난다. 레드 와인을 마실 때 쓰는 와인 잔은 좀 크고 오목하게 생겼다. 떫고 텁텁한 맛을 잘 볼 수 있도록 와인이 혀의 안쪽 부분에 떨어지도록 되어있는 것이다. 레드와인은 일반적으로 송아지고기와 돼지고기는 요리에 많이 곁들어 먹기도 한다. 레드 와인의 종류로는 카베르네 쇼비뇽(Cabernet Sauvignon),메를로(Merlot),피노누와(PinotNoir),보졸레(Beaujolais),발폴리젤라(Valpolicella),람부르스코(Lambrusco),키안티(Chianti),버군디(Burgundy),진펀델(Zinfandel),보르도(Bordeaux)등이 있다.⑶ 로제 와인약한 핑크 색을 띠고 있는 로제 와인의 제조 과정은 레드 와인과 비슷하다. 레드 와인과 같이 포도껍질을 같이 넣고 발효시키다가 어느 정도 색이 우러나오면 껍질것이 단점이다.⑥ 와인의 테이블 매너와인처럼 종류가 많고 맛이 다채로운 술도 없다. 그래서 와인을 주식으로 삼다시피하며 오랜 세월 즐겨 마셔 온 서구사회에서는 어떤 때 어떤 와인을 어떻게 마시는지에 관한 까다로운 격식과 예법을 지켜 오고 있다. 그러나 이러한 매너는 격식을 갖추기 위한 형식에서 비롯된 것이 아니, 와인의 맛을 제대로 즐기려는 사람의 심리적인 미각에서 비롯된 것이므로, 굳이 외울 필요는 없다. 와인에 관한 특별한 지식이 없는 사람이라 해도 지금까지 스스로 겪어 온 맛에 대한 경험을 바탕으로 그때 그때 자신의 미각이 원하는 와인을 선택하면 된다.⑦ 와인의 음미㈎ 색/투명도화이트 와인의 빛깔은 대개 순백색부터 호박색까지이며 결코 갈색이나 구릿빛이어서는 안된다. 로제 와인 역시 갈색성이 없는 핑크 오렌지계의 빛깔이어야 좋다. 일반적으로 좋은 포도주는 크리스털과 같이 광채가 나야 하며 혼탁하지 않은 완전히 맑은 상태여야 한다. 너무 오래된 와인의 경우 오히려 광채가 나빠질 수 있다. 투명한 와인글라스에
