초등학생을 위한 보존료 교육책자 개발 (Development of an Education Booklet on Food Preservatives for Elementary Students)

초록

본 연구의 목적은 초등학교 고학년 학생들에게 식품첨가물 중 보존료에 대한 오개념을 바로 잡고 올바른 정보를 제공하기 위한 교육책자를 개발하는 것이다.
식품첨가물 중 가장 관심이 높은 보존료를 대상으로 교육책자를 개발하기 위해 2014년 2월부터 보존료 관련된 문헌과 선행 연구 자료들을 분석하였고, 서울 및 경기 지역 초등학교 고학년 학생을 대상으로 보존료에 대한 인식 및 정보 요구도에 관한 설문조사를 실시하여 425명으로부터 유효한 응답을 얻었다. 설문분석 결과 초등학생들은 보존료에 대한 인지 수준은 높지 않았으나, 상당수가 보존료는 건강에 위험한 것이라고 생각하고 있었다.
이 같은 선행연구 분석과 설문조사 결과를 분석한 후 전문가와 연구진의 회의를 거쳐 보존료 교육책자인 ‘애디와 함께하는 보존료 여행’를 개발하였다. 책자는 보존료의 정의, 종류, 필요성, ADI(1일 섭취허용량), 보존료 안전성 평가시험법, 식이노출, 식품첨가물의 표시사항 관련 내용, 건강하고 안전한 가공식품 섭취방법과 식약처와 관련해 국내의 식품첨가물 관리 현황에 대한 이해를 높이는 내용으로 구성하였다. 흥미로운 정보 전달을 위해 초등학생이 선호하는 캐릭터들을 등장시켜 책자 전반에 자연스럽게 이야기를 주도하면서 보존료에 대한 정보를 쉽게 설명해 주도록 구성하였다.
이 교육책자는 2014년 10월 둘째 주에 서울 지역 한 초등학교 고학년 학생 93명을 대상으로 시범 평가 교육을 실시하였다. 교육 실시 결과, 책자에 대해 이해도가 75%, 흥미도가 63%, 보존료의 올바른 이해에 도움이 82%, 건강한 생활에 도움이 75%로 나타나 교육책자의 교육적 효과를 확인할 수 있었으며, 향후 초등학생들의 보존료에 대한 교육용 교재로 활용될 수 있을 것이다.

영어초록

The purpose of this study was to develop an educational booklet in order to provide sound information which would correct misconceptions about the preservatives in food additives for upper grade elementary school students.
For the development, previous research articles related to preservatives were reviewed in February 2014. A survey was also conducted on awareness of preservatives and the information needs of 425 upper grade elementary school students in Seoul and Gyeonggi province by using a questionnaire developed to obtain a valid response from them in April 2014. The results of the survey showed that the level of understanding on preservatives was low, and many students thought preservatives were dangerous to their health. Many students had less experience with education and promotions on preservatives, and felt that they needed it. In addition, preservatives’s safety, how to make preservatives and why the preservatives are added in the food are the most curious topics of interest.
Based on the previous research and through consultation with experts and reserchers, an educational booklet that considers the elementary upper students interest and level of understanding, titled “Travel the Preservatives with Addy”, was developed to deliver, correct information on preservatives and adjust a misconception. The booklet consisted of definition, various types, necessity on preservatives and safety, control of food additives, ADI (Acceptable Daily Intake), allowable amount of intake in the actual foods, dietary exposure, how to intake food for health and safety and introduction of the Ministry of Food and Drug Safety for understanding governmental food additive management. To make the booklet more interesting, characters who appeared favorites for elementary school students led the explanation on the various information about preservatives. At the end, the students solved the OX Quiz, which summarizes the booklet contents.
When the booklet was applied to the 93 upper grade elementary school students 75% answered that the booklet was easy to understand, 63% answered that the booklet was interesting, 82% answered that the booklet was helpful for understanding preservatives, and 75% answered that the booklet was helpful for a healthy and safe dietary life, proving the effectiveness of the booklet as an educational meterial.
